May 12. Woke up to a lovely morning. There was a little bit of undecorating to do; yesterday’s laundry needed to be folded and put away; the bed needed to be made. Then at 9:00, we called C&C to wish Christy a happy birthday and enjoy an hour’s chat with the two of them. After we had a snack, Daddy wanted to go out for a walk; but it was cooking-a-main-meal day so Daddy went for a walk, and I went out in the yard for a while to get some sunshine. Took the scissors out and trimmed some dead leaves off some flowers while I was out there. Came in and started dinner — peeling potatoes and a yam and cutting them up into small pieces, planning on mashed taters/yams today. Set them in a pan of water, with a little olive oil added to keep them from boiling over, and then started preparing the chicken. Well, onion first — chopped that up into small pieces to sauté with the chicken. Then cut two chicken breasts into small pieces. Put a little olive oil and butter in the skillet; and once the butter was melted, I tossed the onions and chicken in to sauté, seasoned with salt. Started the taters cooking. Got ingredients ready to add later before mashing them. Once the chicken and onions were brown, I added water, bouillon cubes, and other herbs and seasonings. Then got flour and water mixed to make gravy once the chicken was done. Just about noon, when all was done cooking and I was mashing the potatoes, Dallas came with Charity Chicken . This was an offering of firstfruits from Dallas and family. He wanted us to see the chicken before he took her life. I took a picture of him with Charity Chicken. Then we boiled a pot of water for him to use to de-feather the bird. Found a couple sharp knives he could use, as well as a small bucket to catch the blood in, and a piece of plastic to do the rest of the work on. I didn’t take a picture of him killing poor Charity Chicken, but I did take pictures of him removing the feathers and removing the innards. He cut off the feet which they like to eat. He also removed the waste from the intestines, and they will eat the intestines. While he was doing all that, Daddy and I ate our dinner. And while he was cleaning up, I took over and gave the chicken a good bath to get rid of all the blood. Cut the chicken into pieces, giving the wings, neck, and tail back to Dallas as they like to eat those too. Also found the two kidneys and added those to his pile of goodies. It was 2:00 before all that was done. I lay the pieces of chicken on a clean rag (so it could dry before I put it away in the freezer), covered with another clean rag because flies had come looking for this dead animal. The skin was soft and easily came away from the meat so I was able to remove all the skin. The meat appears to be very tender and the two breasts and two legs are thick with white meat. What a blessing! That job done, I was exhausted; and we went and had a short nap. After nap, I put water on to heat for washing my hair, bagged up Charity and put her into the freezer, had a drink, washed my hair. Then it was time to sit down and relax and have a little fruit snack. Also finished yesterday’s journal notes because it got too late last night to finish, spent some time doing Bible study in Exodus, and started today’s journal notes. This evening, I transferred pictures to the computer, edited them, renamed them, and resized them. “Ye have seen what I did unto the Egyptians, and how I bare you on eagles' wings, and brought you unto myself.” (Exodus 19:4) If the Lord could destroy the Egyptians, carry His chosen people out of Egypt and through all their journeys, and bring them unto Himself, surely Christ our Lord can bring His chosen bride out of the world, through all the wilderness wanderings of life, and unto Himself. “In all their affliction he was afflicted, and the angel of his presence saved them: in his love and in his pity he redeemed them; and he bare them, and carried them all the days of old.” (Isaiah 63:9) May 13. Slept in a little late this morning so by the time I had had my morning lemon drink, made and drank a smoothie, cooked and eaten a serving of rice cereal, had quiet time, made the bed, refreshed the kefir, filled the filter pitcher, and done a couple other small tasks, it was already after 9:00. Daddy and I went for a walk up the airstrip and back. How refreshing it was to get out in the sunshine and warm breeze! Spent the rest of the morning editing the pictures in Kodak Easy Share in the ACER. This afternoon and evening, I worked on the newsletter until it was finished. Praise the Lord for helping me to finish that! “Who gave himself for us, that he might redeem us from all iniquity, and purify unto himself a peculiar people, zealous of good works.” (Titus 2:14) “But ye are a chosen generation, a royal priesthood, an holy nation, a peculiar people [that is, a purchased possession]; that ye should shew forth the praises of him who hath called you out of darkness into his marvellous light.” (I Peter 2:9)
